How the heck can someone use these much parm in a month??? "After opening the pack or when buying a freshly cut piece of cheese, the instructions and suggestions on how long to keep Parmigiano Reggiano vary depending on its maturation: Parmigiano Reggiano with a maturation of 12-18 months and a higher moisture content can be kept for about 15 days. Parmigiano Reggiano with a maturation of 24 months or more can be kept for about 1 month. If some mould develops on the surface, it is possible to remove it using a knife." This is a quite large hunk of Parmesan, but parmesan freezes really well. When I buy a big wedge of it, I cut it into smaller chunks, wrap each very tightly in plastic wrap, and put all the wrapped chunks into a plastic freezer container. Then I can defrost a small chunk at a time. It would also make great gift baskets with a package of fancy pasta and a nice jarred sauce. Posted by: Mariatini on November 9, 2024 |
